Bo Fowler is a true Chicago restaurant powerhouse, though she is far too modest to describe herself that way. After leaving medical school and finding her way into professional kitchens, she went on to open some of the city’s most memorable restaurants, including Fat Willy’s Rib Shack, Owen & Engine, and Bixi Beer. Her food reflects the full range of her upbringing -- Korean, Vietnamese, Scandinavian, and deeply Midwestern -- while her career has been defined by persistence, instinct, hard work, and a willingness to learn as she goes. In this episode, we discuss leaving medical school for the kitchen, growing up in a sprawling multicultural family, the rise and legacy of Owen & Engine -- and so much more!
